The Classic Cobb Salad originated in the 1930s at the Brown Derby Restaurant in Hollywood, and it quickly became their signature dish. It’s a wonderful, colorful main dish salad that is very satisfying. You can grill or poach the chicken, and the lemon vinaigrette dressing gives it a brighter flavor - perfect for summer!
Classic Cobb Salad with Red Wine Lemon Vinaigrette
Ingredients
Salad
one large head of romaine or iceberg lettuce
2 lbs chicken breasts, grilled or poached and cubed
6 hard boiled eggs, chopped
1/2 lb bacon, cooked crisp and broken into bits
2 large avocados, chopped into cubes
1/2 red onion, diced
2 large tomatoes, diced
1 cup shredded Monterrey and Colby cheese, or crumbled Blue Cheese
salt and pepper to taste
Dressing
1 teaspoon lemon zest
the juice of 1 lemon
3 tablespoons red wine vinegar
1 tablespoons honey
1/4 cup olive oil
salt and pepper to taste
Directions:
Add lettuce to a large bowl. Top with cooked and chopped chicken, crisp
bacon, chopped hard boiled eggs, avocados, onion, tomatoes and cheese.
For salad dressing, combine lemon zest, lemon juice, red wine vinegar and honey for salad dressing to
a small bowl. Whisk in olive oil. Add salt and pepper.
Dress salad lightly and enjoy!
